On the 1st of February, we celebrate St. Trifonas, the patron saint of vineyards (in Soufli they call him Trifilos) and because it is the first day of the month there is a sanctification in the church. The wine growers cut the consecrated bread and spray their vineyards with holy water.

The winegrowers consider working on the Saint’s day a sin, and they recite the anecdote of the wine grower that went to prune his vines and cut his nose off by mistake. A dramatization of the supposed incident is held every year in the village Dikaia, at a chapel build in the vineyards to honor St. Trifonas.
